I will apologize right off the start for the chaotic menu planning lately. It seems like our schedule has been a bit crazy lately, the weather has been nutty, and things have just gotten off track a bit.
We ended up with more than expected leftovers last week and with leaving for the weekend we wanted to be sure to eat those up before we left. I now am putting some of the meals from last week into this week’s plan because we got a bit mixed up.
Also… the chicken leg quarters that were on sale with a coupon for 39 cents a pound this past week at Price Chopper were going to be part of the menu this coming week, but those were out. I got a rain check… so… recipes with leg quarters will be coming up when I get a chance to get those.
Then… I usually consider what is a super deal this coming week by going through the flyer and comparing my Sunday paper coupons. We were away… and I didn’t get the paper… so… no ad or coupons….. UGH!
I don’t think that I will be able to go to Price Chopper this week now anyway because Hubby needs to repair one more thing on my truck before taking it back in to get inspected…. so… I will be minus a vehicle. I will be sending him to the grocery store that is closer to get the absolutely necessary purchases instead.
With all that…. here is the tentative menu for this week:
Monday– Pork Chops with Sweet Potatoes and Pears (Weight Watchers online recipe from last week’s menu plan- find the link to the recipe there.)
Tuesday– Broiled Lemon Pepper Tilapia with Brown Rice and Steamed Green Beans (from last week’s menu, but switched the potatoes for rice because we are doing potatoes the day before)
Wednesday– Pork Chops with Honey Mustard Sauce (recipe from Noble Pig… she uses pork loin) with Potatoes or Rice and Steamed Veggies
Thursday– Leftovers
Friday– Shrimp Scampi over Spaghetti
Saturday– Whole Chicken in the Crock Pot (recipe here) with Stuffing (you can do some crazy stuffing recipe, but my family actually prefers the stuffing from the box 🙂 ) and some sort of Veggie
Sunday– Chicken Soup with leftover chicken from Saturday (Recipe will most likely be from The Soup Bible)
