Menu Plan 4/4-4/10/11

Here is the menu plan for this week.  I got my new Taste of Home magazine last week and am using two recipes out of that.  I also decided to try and use up some odd pantry items that I have had for a bit- lentils, orzo, vermicelli, acini de pepe.  I have been including one steak meal using the steak deal that we got.  I also had to put the chicken meal from last week back into the mix since I ended up making a bacon potato chowder last week instead to use up some extra milk that I had.

 

Monday–  Artichoke Mushroom Lasagna (from Taste of Home)

Tuesday–  Sweet Potato Crab Cakes (from Taste of Home) with Lentil One-Pot Casserole (Weight Watchers)

Wednesday–  Leftovers

Thursday–  Pasta e Fagioli (Weight Watchers)-  Uses up the Vermicelli pasta

Friday–  T Bones or NY Strips with roasted potatoes and Tossed Salad

Saturday–  Chicken Breast with Wine Sauce and Asparagus (from last week-  Weight Watchers recipe)

Sunday–  Leftovers

Menu Plan 3/28-4/3/11

Here is the menu for this coming week.  Things are working out much better having two leftover days… especially since I have been eating lighter.  I just got my Taste of Home magazine yesterday too…. so I already know that there will be an Artichoke Mushroom Lasagna and some Sweet Potato Crab Cakes coming up next week.

Monday–  Meatloaf with steamed veggies

Tuesday–  Spaghetti with Sausage Meat Sauce/  Portabello Pitas for me (I can’t eat the red sauce while nursing)

Wednesday–  Leftovers

Thursday–  Filet Mignon with Bearnaise Sauce

Friday–  Tuna Noodle Casserole

Saturday–  Chicken Breast in Wine Sauce with Asparagus

Sunday–  Leftovers

Menu Week 3/21/11

I have been a bit absent lately… trying to catch up on some stuff around the house.  My oldest is starting school this week and we have been catching up on appointments and making sure things are in order before that happens.  We have also been working on a bit of spring cleaning in the middle of that and had our wedding anniversary this past week.  It seems like a whole lot happened all at once and I slacked off a bit with the blog.  I am hoping to catch up on posting some deals this week for everyone and will start gathering up some cute spring/easter decor and crafts.

 

So… this is the menu for the week as of right now.

I will explain that there will be only one chicken recipe this week mainly because…. I don’t have any more chicken!!!  I got the coupon for price chopper when they had leg quarters for 39 cents a pound and they were out.  I got a rain check for those and didn’t go shopping that next week.  The following week they had all price chopper chicken packs on sale 40% off so by the time I got to go shopping… they had NO chicken left.

The other weird thing about upcoming menus is the abundance of steak and beef recipes.  We just bought a case of meat from this guy who comes around once in a while selling cases of meat and seafood.  We got a whole lot of steak- everything from t-bones, ny strips, fillet mignon, porter house…. etc.  So… I will be including recipes for steak in the following weeks, but usually don’t buy much for steak other than special occasion because of the cost.

 

Monday–  Coconut Shrimp with brown rice and steamed carrots

Tuesday–  Leftovers

Wednesday–  T Bone Steaks marinated in Chicago Steakhouse by A1 with mashed potatoes and steamed green beans

Thursday–  Pork Stir Fry (using beans, asparagus, edamame, peas, and carrots from the freezer) over brown rice

Friday–  Chicken Parmesan Subs

Saturday–  Leftovers

Sunday–  Quick Minestrone

 

 

Menu Plan 3/14-3/20/11

Okay… so….  I am doing the menu plan today because I still have not gone shopping for this week and am not sure I will be able to go shopping next week.  I decided to make a double list for when I go (today hopefully) and work off of what we have.

The stomach bug has been rotating in the house and it hasn’t hit me yet (yes… I know I shouldn’t have just jinxed myself.. but I know I am going to get it anyway).  So… as of right now… the following is the menu plan, but will most likely change.  I did include quite a few one dish or casserole type meals that I am pretty sure the hubby could follow directions and make.

Monday–  Baked Pasta (penne) with Butternut Squash and Ricotta

Tuesday–  Sweet and Sour Pork (Grandpa’s Recipe previously posted)

Wednesday–  Leftovers

Thursday–  Chicken Divan

Friday– Our Anniversary – Hoping for a date night Friday or Saturday…. we shall see….

Saturday–  Shepherd’s Pie

Sunday– Leftovers (we keep having a ton of leftovers.. and I want to be sure to use them up instead of making another meal just because I put it on the menu on my blog.)

and… I already know I am making some sort of coconut shrimp next week.  I found a super simple recipe and have some coconut to use up.

Menu Plan 3/7/11-3/13/11

Monday–  Jeans Beans (local restaurant that has the best fish- Grammy’s favorite) Fish Dinner with the Family for Grammy’s Birthday

Tuesday–  Sour Cream Pork Chops in the crock pot

Wednesday–  Chicken Soup with the chicken from last week’s menu

Thursday–  Leftovers

Friday–  Homemade Pizza with the kiddos and salad

Saturday–  Cola Steak n’ Onions with potatoes

Sunday–  Chicken Wings with Celery

 

 

Menu Plan 2/28-3/6

I will apologize right off the start for the chaotic menu planning lately.  It seems like our schedule has been a bit crazy lately, the weather has been nutty, and things have just gotten off track a bit.

We ended up with more than expected leftovers last week and with leaving for the weekend we wanted to be sure to eat those up before we left.  I now am putting some of the meals from last week into this week’s plan because we got a bit mixed up.

Also… the chicken leg quarters that were on sale with a coupon for 39 cents a pound this past week at Price Chopper were going to be part of the menu this coming week, but those were out.  I got a rain check… so… recipes with leg quarters will be coming up when I get a chance to get those.

Then… I usually consider what is a super deal this coming week by going through the flyer and comparing my Sunday paper coupons.  We were away… and I didn’t get the paper… so… no ad or coupons….. UGH!

I don’t think that I will be able to go to Price Chopper this week now anyway because Hubby needs to repair one more thing on my truck before taking it back in to get inspected…. so… I will be minus a vehicle.  I will be sending him to the grocery store that is closer to get the absolutely necessary purchases instead.

With all that…. here is the tentative menu for this week:

 

Monday–  Pork Chops with Sweet Potatoes and Pears (Weight Watchers online recipe from last week’s menu plan- find the link to the recipe there.)

Tuesday– Broiled Lemon Pepper Tilapia with Brown Rice and Steamed Green Beans (from last week’s menu, but switched the potatoes for rice because we are doing potatoes the day before)

Wednesday–  Pork Chops with Honey Mustard Sauce (recipe from Noble Pig… she uses pork loin) with Potatoes or Rice and Steamed Veggies

Thursday– Leftovers

Friday–  Shrimp Scampi over Spaghetti

Saturday–  Whole Chicken in the Crock Pot (recipe here) with Stuffing (you can do some crazy stuffing recipe, but my family actually prefers the stuffing from the box 🙂 )  and some sort of Veggie

Sunday–  Chicken Soup with leftover chicken from Saturday (Recipe will most likely be from The Soup Bible)

Menu Plan 2/21/11-2/27/11

This menu is based on the asparagus that was on sale for $1.88/lb, the golden potatoes that I need to use up, pears I bought last time, ground beef to use, salad fixings to use, and my craving for tilapia.

MondayRoast Chicken Breast with Potatoes and Asparagus (Weight Watchers online recipe)

Tuesday–  Pork Chops with Sweet Potatoes and Pears (Weight Watchers Online recipe) -(This recipe actually uses canned sweet potatoes and canned pears, but since I just bought pears and sweet potatoes are on sale I think I may alter the recipe a bit and use fresh.)

Wednesday–  Taco Macaroni and Cheese (from The  $5 Dinner Mom Cookbook)

Thursday–  Grilled Chicken Summer Salad (I know.. not summer.. wishful thinking.. recipe still sounded good) (from The $5 Dinner Mom Cookbook)

Friday–  Broiled Lemon Pepper Tilapia with Roasted Potatoes and Steamed Green Beans (This is just a thrown together dish I like to make that is about how it sounds, but I will type it up at some point.)

Saturday and Sunday–  Eating out…. 🙂

Next week will be using some chicken drumsticks from the Price Chopper sale this week and maybe more sweet potatoes.  I am also planning on using that whole chicken from last weeks sale for a dinner on Saturday and then a soup on Sunday.

Menu Plan 2/14-2/20

I am hoping to stick to this menu plan this week.  It seems like the past few weeks something has been happening to make me have to switch it around.  I plan half of the menu on things I bought this past trip and know that some of the meals can be based off of things I buy through the week.  The only thing is…. I don’t always shop on the same night… so….  try to stick with me.

This week is Valentine’s week too, so we may be trying to see if someone can watch the kids for a date night at some point.

Menu Plan as it stands right now—

Monday–  Pork Lo Mein (recipe from our local tv station’s food guy)

Tuesday–  Goat Cheese and Herb Stuffed Chicken Breasts

Wednesday–  Ham and Yams in Cider Sauce

Thursday–  Leftovers or Dill and Honey Pork Chops if we don’t go for the leftovers

Friday–  Bean and Rice Burritos

Saturday–  Homemade Pizza and Salad (the kids make pizza with me using frozen dough, jarred sauce, and whatever toppings we find and sound good) Here is a recipe for Homemade Pizza Supreme that has homemade dough and sauce if you want to try that.

Sunday–  Lentil and Brown Rice Soup

Menu Plan 2/7-2/13

Monday-    Chicken Stir Fry over Brown Rice

Tuesday-  Sausage Pepper and Onion Sandwiches

Wednesday-  Greek Chicken Drumsticks with Potato Spinach Bake

Thursday-  BBQ Baby Back Ribs (cheating and using the prepackaged ribs in sauce that were on sale BOGO at Price Chopper last week)

Friday-  Tuna Noodle Casserole

Saturday-  Leftovers

Sunday-  Tortellini, Bean, and Pesto Soup

Menu Plan 1/31-2/6

MondaySkillet Chicken Soup (from last week’s menu for Sunday- got bumped- recipe already posted)

TuesdayPizza Pockets with Tossed Salad  (I have to type this one out.  I am taking a few other ideas and putting them together.  Basically use refrigerated biscuits rolled out and stuff with cheese and toppings.  I am going to use my Tupperware empanada/pie press to seal them into half circle pockets.)

Wednesday–  Creamy Chicken Breasts and Cheddar Potato Strips

Thursday–  Beef and Vegetable Stew

Friday–  Parmesan Tilapia with Penne Broccoli Alfredo (from last week’s menu- got bumped because we had a last minute date night- woot woot—  recipe already posted)

Saturday–  Crockpot Pork Loin with Sweet Potatoes  (Use pork seasoning packet and cook in crockpot on top of potatoes, onions, and garlic.)

Sunday–  Cheesy Spinach Soup with Garlic Bread (I will type this up too.  It is from The Soup Bible cookbook that I have.  Super easy with Velveeta and frozen spinach…)

Thursday, Saturday, and Sunday are all crockpot dinners!  I love being able to put everything in the crockpot early and have it ready when hubby gets home.  This makes for an easy week.

I was calling this Menu Monday, but realized that I am planning earlier than Monday for that week so that I know what to get when I get a chance to grab some groceries.  I was hoping to post it early enough that if you actually wanted to make my exact menu for the whole week…  you would know enough ahead to get your groceries.

When do you think I should make up the menu for the next week?  Would it help if I posted them mid week for the following week instead right before?
