Lentil and Brown Rice Soup from The Soup Bible


1 envelope LIPTON RECIPE SECRETS Onion Soup Mix

4 cups water

3/4 c lentils, rinsed and drained

1/2 c uncooked brown or regular rice

1 can (14 1/2 oz) whole peeled tomatoes, undrained and coarsely chopped

1 medium carrot, coarsely chopped

1 large stalk celery, coarsely chopped

1/2 tsp dried basil leaves

1/2 tsp dried oregano leaves

1/4 tsp dried thyme leaves

1 tbsp finely chopped fresh parsely

1 tbsp apple cider vinegar

1/4 tsp black pepper


1.  In large saucepan or stockpot, combine soup mix, water, lentils, uncooked rice, tomatoes with liquid, carrot, celery, basil, oregano, and thyme.

2. Bring to a boil, them simmer covered, stirring occasionally, 45 minutes or until lentils and rice are tender.  Stir in remaining ingredients.

Makes 3 (2 c.) servings.
