Taco Macaroni and Cheese

We actually had this dinner last night.  I will fill you in when I do next weeks menu plan that will be all sorts of a mixed up combo from this past week.  We are going away this coming weekend and with last weekend’s bridal shower leftovers…. the menu got a bit mixed up.

 

Anyway…

This recipe turned out to basically be Goulash with melted cheese on top.  It does have milk in the “sauce”, but didn’t taste much different from when I make goulash with no milk.  That said…. it is still really good, but not as different as I expected reading the name of the recipe.

Oh.. and I added extra cheese!  🙂

 

Taco Macaroni and Cheese from The $5 Dinner Mom Cookbook by Erin Chase

1 package elbow macaroni (16 oz)

1/2 pound ground beef

1/2 onion chopped

2 garlic cloves crushed

1 can (6 oz) tomato sauce

1 can (12 oz) diced tomatoes with green chilies

1/4 c milk

1/2 tsp chopped fresh cilantro

1/2 to 1 tsp cayenne pepper

1 tsp ground cumin

1 c shredded cheddar cheese

She serves this with 1/2 cantaloupe cut up

 

In a large pot, cook the macaroni according to package directions.  Drain and set aside.

In a large skillet, brown the ground beef with the chopped onion and crushed garlic and drain excess fat.  Return ground beef and onion mixture to the skillet, and add the tomato sauce, diced tomatoes, and milk.  Stir in the spices and simmer about 10 minutes, allowing the sauce to form and the flavors to mingle.  Add the cooked macaroni to the sauce and mix to combine.  Sprinkle with cheese over the top of the mixture while still warm in the skillet, and allow the cheese to melt.
