Ham and Yams in Cider Sauce

 

1 lb yams or sweet potatoes

1 (12 oz) lean ham steak cut into four pieces

1 c. apple cider

2 tsp all purpose flour

1/8 tsp ground cloves

 

1. Cover the yams with water in a large saucepan and bring to a boil.  Boil until just tender, 30 to 40 minutes.  Drain, peel, and slice 1/4 inch thick.

2. Heat a large nonstick skillet.  Add the ham pieces and cook until lightly browned, about one minute on each side.

3. Whisk together the cider, flour and cloves in a small bowl until smooth.  Pour into the skillet and add the yams.  Simmer gently, stirring often and turning the yams in the sauce, until the sauce is thickened, about 5 minutes.

 

The recipe suggests serving this with coleslaw and steamed collard greens.

 

This is a Weight Watchers recipe.  It works out to be six points per serving.  This recipe makes four servings.
