Pork Chops with Sweet Potatoes and Pears

This recipe and photo are from Weight Watchers….

It calls for canned sweet potatoes and canned pears, but I just bought pears and there is a coupon for sweet potatoes at Price Chopper this week so I think I will alter this a bit and use fresh.

 

Pork Chops with Sweet Potatoes and Pears

Ingredients

1 Tbsp vegetable oil
1 Tbsp all-purpose flour
1 tsp curry powder
3/4 tsp table salt
1 pound(s) lean boneless pork chop, four 4 oz pieces
15 oz canned sweet yams in syrup, drained
15 oz unsweetened canned pears, drained, reserve 1/2 cup juice
1/2 tsp dried thyme
1/8 tsp black pepper

Instructions

  • In a large nonstick skillet, heat oil.
  • In a large sealable plastic bag, mix flour, curry powder and 1/4 tsp of salt. Add pork and shake to coat.
  • Transfer pork to skillet. Sauté until cooked through, about 3 minutes on each side.
  • Meanwhile, cut yams into bite-size chunks. Add to pork with pears, reserved pear juice, thyme, pepper and remaining 1/2 teaspoon of salt. Reduce heat and simmer until pork is cooked through, about 2 minutes longer.
