Crockpot Pork Loin with Sweet Potatoes (or Oven)

 

***Update-  I ended up making this in the oven since I made a 4-5 lb. pork loin with double the potatoes and onions because we had company.  I did the same steps below, but doubled.  Layered them in a roasting pan and cooked on 325 degrees for almost two hours.

 

Use about a 2 lb. pork loin or tenderloin seasoned with a prepackaged season mix (McCormick makes an Herb Roasted Pork Tenderloin Bag N Season that I don’t use the bag for the crockpot.. just the season) or make your own quick rub with herbs like garlic powder, coriander, cumin, thyme, and oregano.  You can use this recipe to make your rub or just make up your own.

Sear the meat on the stove in a frying pan about ten minutes until all sides are just browned.

Cube up a couple medium sweet potatoes, one medium onion, and about six garlic cloves.  Place these in the crock pot on the bottom.  (If you are trying to make enough for more than about four people you may want to add some extra sweet potatoes or yukon golds if your crockpot is big enough.)

Pour in 1 cup of vegetable or chicken broth over the vegetables.

Place the seasoned pork loin over the vegetables.

Cook in the crockpot on low for 8-10 hours or high for 4-5 hours.
