Spinach Frittata

 

Update—  I made this and I would make a few changes for next time.  I would do nine or ten eggs next time and maybe a bit more cheese.  It tasted great, but was super spinach-y (made a new word).  We ate it with the hot sauce on it too and the kids even ate it all up (minus the hot sauce on theirs).

 

***Warning–  I just made this recipe up by taking recipes online and combining them to work with what I had.  I am also unsure of whether or not my frying pans can go into the oven.   I am not starting it on the stove to finish in the oven as many recipes ask you to do.

I will repost an update after it is done with a picture and review of how it came out.

Spinach Frittata

6 eggs (I would do 9-10 eggs next time)

2 tbsp. milk

1/4 c. parmesan

1/2 c. shredded cheese (cheddar or cheddar blend) (I might add more cheese next time)

1 box of frozen spinach drained

1/4 c. chopped green pepper

1/2 tsp. italian seasoning

1/4 tsp. garlic salt (or use garlic powder and add salt seperate)

dash of ground black pepper

Mix up eggs in bowl first with milk (as when making scrambled eggs).  Add the following ingredients and mix completely.  Pour into greased pie plate or super duper Pampered Chef pie plate stoneware.  Bake in pre-heated 350 degree oven for 30 minutes or until eggs cooked through in the center.

We (hubby and I) always use hot sauce on scrambled eggs, quiche, or frittata.  I will probably serve some fruit on the side.  I am thinking some nice garlic bread or toasted bread would be great with this, but I don’t have time to get that ready.

Craigslist Can Be Super

 

I wanted to share with you another post on a fellow blog where she finally gave in to craigslist.  You really can find a ton of good stuff… especially if you aren’t against painting wood.

I was just thinking yesterday how I want to go out to the barn and get more pictures of all of the things that I have been gathering up for when the house is done.  My plan is to slowly snag up pieces here and there from garage sales, thrift stores, craigslist, etc. that I can put to good use once the addition is done.

* For those of you who don’t know… we are more than doubling our house on a very tight budget with very minimal extra time and not going into any debt at all while doing it.  The result—  an addition that is taking a few years.  Yes… years….   It is a bit painful at times knowing what I will have and not having it NOW, but I know that it will be great when it is all done.  My husband is doing the entire thing alone from drawing up the plans, grading, digging the foundation, pouring foundation, building the structure, electrical, plumbing…. etc.  He is an extremely talented civil engineer that is also holding down a full time position as that.  So….  it will get done eventually.

 

Anyway….

Check your craigslist.  People put things up for free or really really cheap.

Here is a perfect example.

Over at Dittle Dattle she finally went to craigslist and found the perfect end tables for her son’s room.  Check out how beautiful the room looks.  You would never know that she had items in there that are second hand.

Target Coupon Match Ups for 1/30-2/5

 

Over at Totally Target you can see the coupon match ups for next weeks ad already.  She takes the preview of the ad and the preview of the paper and combines those with the Target online coupons.  It makes for some great deals.  Check it out and plan ahead.

Sunday Coupon Preview

 

Keep in mind that coupons vary by region, but this is the list that is out for this Sunday 1/30/2011 coupon inserts.  We are supposed to be getting four inserts and they should have similar coupons to what is posted here.  I like looking at this to see if I might want to spring for multiple papers.  This also shows the expiration on the coupons which can also help your decision on how many papers to purchase.
